I have always enjoyed Spinach Artichoke Dip. But I really don’t think the mayonnaise is necessary. I prefer not to use it and most recipes include mayonnaise. Secondly, most recipes also include frozen spinach. Well, I was looking to create a recipe that was lower in calories and utilized fresh spinach. So, that’s exactly what I did! This dip is delicious both hot or cold. Lighter in calories utilizing reduced fat cream cheese and a small portion of light sour cream. The rest of the ingredients and sautéing the fresh organic spinach before combining everything makes this Spinach Artichoke Dip one of my most favorite and versatile appetizers.
This also a great make ahead appetizer too! Combine everything and put in the refrigerator the night before. Bake the next day! Chips, french baguettes, crudités whatever you choose, this Spinach Artichoke Dip is a definite game changer!
- 1 tablespoon extra virgin olive oil
- 1 Tablespoon Butter
- 1 clove of garlic, finely minced
- ¼ cup red onion, finely chopped
- ¼ red bell pepper, finely chopped
- 1 14 oz. jar grilled and marinated artichokes, drained
- 1 8 oz. Light Cream Cheese, softened
- ¼ cup light sour cream
- 8 ounces fresh baby spinach, washed and dried
- 1 teaspoon black pepper
- ½ cayenne pepper (optional)
- ½ teaspoon sea salt
- 1 cup parmesan cheese, grated
- ½ cup mozzarella cheese, grated
- Topping
- ½ cup parmesan cheese, grated
- ⅓ cup mozzarella cheese, grated
- 1 teaspoon smoked paprika
- 1 tablespoon chives, finely chopped
- Preheat oven to 375 degrees Fahrenheit.
- Heat medium size skillet on medium to high heat.
- Add olive oil and butter.
- Add garlic, onion, and red bell pepper and sauté for 3 minutes.
- Add spinach and cook until wilted. Set aside.
- In a medium-size bowl, put cream cheese and sour cream.
- Add salt and peppers. Stir.
- Add sautéed spinach, artichokes and cheeses.
- Place dip mixture into a medium-size baking dish.
- Add toppings in the order listed above.
- Bake for 20 minutes.
- Remove from oven. Let cool 5 minutes.
- Serve hot with tortilla chips, bread and/or crudités.
